Red Velvet Cake or Cupcakes!!!!

One thing that you most definitely never turn down is a slice of the most mouth watering, tasty, delectable, and scrumptious cake. Mmmmm… just writing this is getting my appetite going.

One cake that is always top of my list is the super yummy Red Velvet cake. The only problem is whether you go to a bakery or a coffee shop it is the most expensive cake on the menu. At some bakeries you can spend up to R300 on a cake, which is absolutely ridiculous.

So yesterday I decided to brave it!!!! I was going to bake the infamous Red Velvet cake!!!

First off I must say the reason why Red Velvet cake is so expensive is because, one the ingredients are quite pricey especially the Unsalted butter and the unsweetened Cocoa and secondly it is quite a mission to make so get ready to focus very hard on this recipe guys because it needs that extra attention.

 

Firstly you need to gather all your ingredients and at least 3 mixing bowls

2 ½ Cups plain flour

1 teaspoon baking powder

1 teaspoon salt

2 tablespoons unsweetened Cocoa powder

50ml red food colouring

120g unsalted butter, at room temperature

1 ½ cups sugar

2 eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 teaspoon white vinegar

1 teaspoon baking soda

 

Icing

250g cream cheese

60g unsalted butter

1 teaspoon vanilla extract

2 ½ cups icing sugar, sifted

Pinch of salt

 

Ok so here is what you need to do!!!

  1. Preheat your oven to 180 °C and then either grease your two baking pans or if you want cupcakes grease your cupcake pan.
  2. Sift together the flour, baking powder and salt into a bowl and set it a side
  3. I n a small bowl mix together the food colouring and the Cocoa powders so it is a smooth paste
  4. In another bowl mix together the sugar and the butter till it is light and fluffy
  5. Beat in the eggs one at a time and add the red cocoa paste
  6. Beat in  1/3 of the flour mixture and then add half of the buttermilk into the mixture
  7. Beat in  another 1/3 of the flour mixture and then the second half of the buttermilk into the mixture
  8. Mix in the last 1/3 of the flour mixture
  9. In a small bowl mix together the vinegar and the baking soda then add this to the mixture.
  10. Finally fill your baking pan or cupcake tray and baking for 25-30 minutes or until cooked
  11. Once done cool the bake completely and remove from the pans

 

Right now you are ready for the icing part!!!!

  1. Blend together the cream cheese and the butter, add the icing sugar, salt and vanilla extract.

Spread this over your completely cooled cake and then enjoy!!!!
